Hey Katie! The new page looks great. I made eggplant parm the other night and thought of you. Although I think I made the process a tad bit less painful by baking the eggplant instead of frying it. Although I did end up making two batches of sauce which was painful enough in and of itself (especially, because like you, I only have a smaller food processor!). Anyway, hope you had a great holiday and hopefully I’ll see you soon!
